Stone & Wood Brisbane

A little piece of the coast in the city

Set inside the beautifully preserved heritage-listed building on Bridge Street that once held Trails Ice, our new brewery brings a bit of the coast to the city – weaving the laidback feel of Byron Bay into the Valley’s historic streets.

In the new space, you’ll find a classic Stone & Wood interior, merch outlet and a working brewery, plus a space for community events and training workshops for our trade partners.

With our 8-hectolitre brewhouse and five fermenters, Mick our resident brewer produces innovative, one-off experimental Pilot Batch brews that we release every Thursday. You can enjoy these in our brewery on tap or fill a 1L Sharer bottle to take home.

Pouring from our 24 taps is the entire Stone & Wood core range, our limited releases – including our Counter Culture releases – and our one-off Pilot Batch brews, exclusive to Brisbane.

Stone & Wood Byron Bay

The heartbeat of Stone & Wood

Inspired by the idea of the ‘village brewery’, we strive to operate as a conscious business and give back to our local community.

Our Tasting Room and brewery in Byron Bay – what we call our ‘spiritual home’ – is located in the heart of the Arts & Industry Estate, housing 31 brewing tanks, a canteen run by the local legends at 100 Mile Table and a spacious beer garden.

Our big brew house

Opened in 2014 and looking out to nearby Wollumbin (Mt Warning), our Murwillumbah brewery – 45 minutes north of our brewery in Byron Bay – is where we produce most of our beer.

This second brewery, established when we were still brewing out of our former Byron brewery in Boronia Place, enabled us to meet the demand of our drinkers across the country.

White Rabbit Brewery

Fermentation with Imagination

Beginning life in the leafy surrounds of Healesville, Victoria – White Rabbit Brewery was born to be different. Occupying an imaginative space in the Yarra Valley, the brewery made use of the original brew kit from our friends at Little Creatures plus two large, open top fermenters. As our imagination swelled, so too did our production. We required more space to play and grow, so we packed up our kit and set off for a new adventure in Geelong.

Our open fermenters lead creative thinking in the brewery. We play with an intriguing use of ingredients and embrace the weird and wonderful to create ales with unique and complex characters and aromas. Pay us a visit in Geelong and you will find a space created for flavour exploration and play. As you enter you’re greeted by copious barrels filled with aging ales. These ales are taking on new and complex flavours, encouraging consumers and brewers alike to embark on a flavoursome, educational journey.

Our brewery is built on the spirit of creativity and collaboration, so prepare to leave your preconceptions at the door. Examine the barrels, peek inside the open fermenters, taste something new and exciting, and immerse yourself in a place where fermentation comes with a bit of imagination.

We make beer, delicious beer!

It’s a family passion.

Founded on Sydney’s Northern Beaches in 2011, Dad & Dave's Brewing is an independently owned and operated family business. Yes - the whole family - Dad, Dave, Mum, Jess, Scott and James!

Dad (John) and Dave are qualified brewers who are passionate in making approachable and sessionable craft beer, and have decades of experience in the hospitality industry between them.

We focus on using the traditional ingredients of malt, hops, water and yeast, and then combine these with some innovative ingredients and brewing techniques to live up to our motto – “We make beer, delicious beer!”
