Steve Drissell serves up a pot of Ardennes Table Beer at Staves Brewery in Glebe

This week on Beer is a Conversation we have the last interview from our swing through Sydney’s inner west breweries, catching up with Steve Drissell of Staves Brewery.

Hidden away in a back alley in Glebe, Staves is one of Sydney’s more unique brewery venues, featuring English-style pub atmosphere and a live performance space that is well known on the city’s music and comedy circuit. 

Staves Brewery has continually impressed with its idiosyncratic line-up of beers, which are made on a tiny and somewhat makeshift brew kit, showing stylistic influences from all over Europe and America.

“Our purpose here in Glebe, is to consistently produce the highest quality, small batch craft beer. We make sure to focus on putting our brew first, before anything else,” says Staves in its own words.

“With a ‘hands on’ brewery located right behind the bar, creating a true connection between the beer we produce and our customers just steps away is extremely important to us. We produce all our beers in house and do everything on premises from milling and mashing to conditioning and tapping. Staves does not cut corners, we produce proper beer.”

Matt Kirkegaard and James Atkinson visited late last year to catch up with Steve, who left his career in the corporate world to follow his dream of opening Staves Brewery.
